Don Carlos is the self-proclaimed home of Waco’s Authentic Mexican cuisine, but their disheveled patio was in desperate need of a remodel. Honestly, no one really questions their claims to authenticity when they’re enjoying a beverage and watching a game or shoving the incredible Senor Grande in their face. A five-pound burrito worthy of its own culinary challenge is not something you quibble about—but you do want a space that’s fun and comfortable to snarf down an “authentic” Mexican meal like that one.
