Picnic for Restaurants

July 15, 2022/in Commercial Enclosed Patio/by Valerie Foley

Summer Can Be a Picnic for Restaurants

Getting together in the free-flowing air with our favorite people and wondering what will come out of the picnic basket or cooler creates great memories. Now restaurants and caterers help busy customers picnic more often, while keeping it all blissfully easy.

Picnic for two or 200?

From take-out picnics to summer picnicking corporate style, restaurants are getting more creative than ever. As every pro knows, the particulars matter.  Are your customers headed to the park or beach with a small picnic or to a venue that holds the entire company? Is on-site catering possible? If not, everything needs to be portable and made at your place, maybe supplementing with grills that are on site or that you bring in. Where can you set up a serving station? And what size is your working area? Is it buffet style or handheld noshing? So many questions, but all good ones.

Think about creating your own handy picnic venue list to steer customers toward locations that thrill them and ensure your success too. Of course, getting from Point A to Point B means making sure that you’re stocked with portable catering equipment like drink carriers, food pan carriers, and other totable helpers.

Hand-Held Menu

Hand-held foods can be very helpful since an outdoor picnic is casual. It’s easy eating. And if it’s a little messy, no one cares. Think small plates, curated.

Also consider personal lunch boxes. You can prepare them ahead of time or offer them to guests to fill as they make their own choices. They’re disposable and re-usable during the event as folks go back for seconds. Or thirds because you’re that good. Plan on foods that travel at a common temperature and aren’t too fragile if you are pre-packing them.

Keep It Lively

Beyond food, helping customers pull off a theme can add to the celebration. You can also charge extra for decorations like sports, ocean, and safari motifs. Any of these ideas can be carried through in food, drinks, desserts, plates, napkins, and other accessories.

Whether you’re catering off-site or on your restaurant patio, it’s also fun to get everyone in the summer spirit with activities like cornhole, dancing, bocce, lawn darts, croquet, kiddie pool fishing, or movie night under the stars.

Thinking Outside the Blanket

Food Network says that Bumpa’s in Charleston, SC makes a beach picnic foolproof with “a beach umbrella and picnic basket to rent, filled with some of their favorite appetizers like hush puppies and pimento dip, plus cold bottles of water and some hand sanitizer. They’ll throw you a link to their custom playlist, “Bumpa’s Bytes,” so you have a seaside soundtrack, too.” Pretty cool! How can you help your restaurant customers make the most of summer? Other restaurants have blankets, picnic baskets and even picnic tables ready to loan, as well.

Keeping That Picnic Vibe Going

Ready to create a picnic feeling at your own restaurant or catering venue long term? A strong patio enclosure can help without breaking the bank. You’ll want to consider important details that add to durability like corrosion-resistant hardware and heavy-duty zippers to ensure that whatever you choose is high quality. Staff experts with years of experience at Southern Patio Enclosures are happy to help you see how to make it happen.

Father’s Day: Restaurants Won’t Fear the Sear

June 10, 2022/in Commercial Enclosed Patio/by Valerie Foley

This Father’s Day there will likely be more than few “Grill Heroes” who want their special Sunday day off. And yet, the allure of smoke will still be strong. Not every restaurant is a bona fide BBQ joint but there are still ways to make sure you’re top of mind for a reservation for those craving BBQ.

Get Inspired by Google

Home cooks everywhere are looking up ideas for new foods to get their grill marks on. Eat This, Not That highlighted the top searches for BBQ recipes by state https://www.eatthis.com/most-popular-grilling-recipes-every-state/. Pineapple was popular in Alaska and Kentucky. Connecticut and Arizona wanted to know how to do lobster tails on the grill. Shellfish was also big with Ohio wanting the skinny on crab legs and Washington State getting intel on cooking oysters. What’s trending at home could be some welcome inspiration for your Father’s Day menu this year. Perhaps it’s time for your chef to get adventurous on the grill along with tried-and-true steaks or burgers.

BBQ To Go

Some fathers will never surrender the tongs and platter under any circumstances. The perfect gift for them could be a basket your restaurant can pull together to be taken away and cooked at home. This could be four marbled steaks with seasoned butters, some garlic bread, and asparagus or other veggies for the grill. Or what about swordfish steaks, corn on the cob, and sweet potatoes all sliced and seasoned? Dessert could include sliced pineapple to grill with a spiced caramel sauce for drizzling on top. Simple instructions could accompany the basket to reassure the grill master on the receiving end.

Add Some BBQ Décor for the Day

Consider some temporary touches to add as a counterpoint to the décor you have now. Play up the rustic and maybe even add some metal and distressed wood to create an industrial farmhouse vibe. Character counts. Whiskey barrels could find a special spot or two. And since so much of BBQ is eaten by hand, think about brown paper table covers or maybe check patterned napkins or recycled paper towels with a stone on top to keep it simple. Do you want to serve the BBQ on tin sheets?  Can you hang a temporary art piece that’s a stenciled pig or steer? Or is there room for rope, cowboy hats or horns?

Park Some Grills on Your Patio

Maybe a smoker and grill could find their way into plain view at your restaurant for Father’s Day weekend. The unmistakable scent will have people lining up. Remember that the smoke alone may be all that’s needed to flavor subtle fish dishes, or you may want to go all-in on a traditional southern barbecue menu for visiting dads. You could even stage a prix-fixe meal that offers several BBQ courses to keep things simpler for your chef. Something like steamed clams on the grill for a first course. Follow it up with grilled butterflied lamb as a main course, or pork and beef from the smoker that’s been going for hours. Seared heads of romaine can be slathered with a choice of blue cheese or honey mustard dressing. And of course, you’ll want dedicated grill space for corn on the cob. There’s nothing limiting you when wood, coals and gas take center stage.

Keeping dad happy on his day is what it’s all about. We know a thing or two about helping dads hang out contentedly on the patio. You may have questions about maximizing the outdoor season for your restaurant.  Or maybe you want to add a roof structure or patio enclosure to keep your customers more comfortable. Our team has over 50 years of combined experience and can guide you toward high-quality materials and designs that hold up to some of the worst days nature dishes out. We’re happy to answer questions, anytime.

To all the dads out there, congratulations on guiding the next generation to help us all create a better world. Fire up the BBQ and celebrate your day!

Hatch Ideas for Your Restaurant’s Brunch

May 18, 2022/in Commercial Enclosed Patio/by Valerie Foley

Brunch is a relaxed, happy meal for restaurant goers. No one knows that better than New Orleans, the city with double the average brunch restaurants of any town. If you haven’t given this beloved weekend tradition a little kick in the omelet lately, it might be time to focus on it.

Classic Eggs and Beyond

brunch restaurant table

Some favorite top kitchen ingredients for this late morning meal are bread, berries, chicken, bacon, and avocado. French toasts and omelets are menu staples. These old reliables will always be on the menu and bring comfort during uncertain times. Do them even better and you get the repeat business you crave.

These classics matter but what else can you sprinkle in to add a new twist? International flavors will continue to inspire chefs from Mediterranean to Cuban to Indian and Asian. Less expected American flavors like Cajun spices and soul food can also add dimension. Can any of these distinct tastes level up eggs, poultry, and toast on your menu? Pesto eggs and gourmet hand-held breakfast sandwiches were trending online recently. Are they worth trying?

As the restaurant industry recovers, consider adding other higher-end proteins like steak and seafood to brunch. Shrimp scampi has certainly been popular over the last few years. These not only tempt guests; higher-end proteins also create a more robust tab at the end of the meal. Try them in benedicts, but also experiment with them beyond that.

Future Brunch Foods

Always be on the lookout for what’s next. Fermented foods like kimchi, miso and pickles have been trending and are here to stay all year. Non-dairy milks are gaining popularity. Having them on hand for those who like them for health reasons, lowering climate footprint, or simply for their tastebuds is a smart move. Oat, almond, and coconut milk are great options. Also be on the lookout for potato milk, which is starting to be served in Sweden. Plant-based eggs are showing up globally. Maple covered fries and hash browns may soon start trending.

Pay attention to TikTok, which births cooking trends by the minute. Younger Gen Z patrons are being exposed to reinvigorated classics and will appreciate seeing ideas that are literally in their social feeds now. Adding what’s popping up on social keeps your restaurant more relevant.

Brunch Experiences

How about a cooking class on a Sunday when your guests have time to try something new on a day off? Your chef could make it happen and then your brunch guests go home with their next meal already made. A sip and paint brunch can combine food and an art class. Live music can delight guests whether easing in with jazz, a pianist or even a DJ who gets morning jamming better than strawberry preserves on toast alone ever could. People will pay more, stay more, and play more with ideas like these, especially when promoted ahead of time online.

Brunch on the Patio

A more leisurely brunch on the patio gets everyone outside and smiling in the sunshine. Ever seen a bocce court next to a restaurant patio? Or a putting hole? Even the experience of patio dining can be refreshed beyond the obvious joy of being outside.

And now, nobody has to be chased off the patio when the weather app on everyone’s phone says rain is racing in. And no one has to overheat under the midday sun at brunch. Enclosed patios help protect everyone. Did you know that you can feel a 10-degree temperature change just by lowering well-made vinyl patio covers?

Keeping things as happy as possible with a patio enclosure is something we know a thing or two about. Feel free to ask our experts anything about vinyl patio shades from color, design, and size to what to look for in the welding process, which significantly affects durability.

Brunch is a way to straddle breakfast and lunch with a beloved weekend tradition. Costs for breakfast ingredients can often be lower than other meals, which can help your restaurant at a time when every penny counts. So, rise to the exciting possibilities in ways that feel most natural to you and your eatery.

farm to table restaurants

Farm-to-Table Restaurant Menus. Fad or Forever?

April 21, 2022/in Commercial Enclosed Patio/by Valerie Foley

Restaurants that recognize trends succeed. And one of the more popular trends of the last decade is the Farm-to-Table movement. While definitions vary, it’s basically food made from locally sourced ingredients with a focus on organic. This trend, also known as Farm-to-Fork, started on the west coast. California chefs like Alice Waters tasted the local, organic difference and then celebrated it on her menu. After a slow build since its introduction in the 1970’s, this way of cooking has become even more popular. People who notice and care about the difference in flavor are willing to pay more for it.

Farm-to-Table Advantages farm to table restaurants

Nutrition and health take priority over convenience. Produce also simply tastes better because it doesn’t have to be frozen to be transported or preserved to prolong its life on a longer journey to the chopping block. Food this fresh and ripe is its own joy. There’s no need for a lot of spices and sauces to enhance or uplift flavor. A tomato off the vine in summer is nothing like a winter version.

Kinder to the Community

Farm-to-Table menus directly support local farmers and the local economy. You know where your food comes from and the people who are growing it. That’s integrity. It makes farmers feel like part of the restaurant team and allows them to get the credit they deserve for their role in an exceptional dining experience. It’s also gentle on the earth with less shipping and trucking needed. This means fewer greenhouse gasses, which reduces your carbon footprint as a business.

More Say for Restaurants

You can patronize farms that are ethically responsible – those farms free from GMOs and the ranchers who allow animals to be free-range and organic. This also allows restauranteurs to have more influence over the types of foods that are grown and raised. The farm-to-fork movement is also a trend that people go out of their way to seek out, offering you a way to stand out in a crowded category. So, it can be a great marketing tool.

Creativity and Commitment

For restaurants, this dedication to local is a lot more work. Sourcing ingredients year-round can be quite a challenge. You need to continually change recipes to match what’s available that day or week. Whatever is fresh and growing is what will appear on your menu.

Food this authentic costs more to source. Animals raised locally are especially expensive. So, this makes it harder for farm-to-table restaurants to succeed in settings where consumers may be more budget-conscious. To help offset that, some restaurants are now cutting out the middle man by buying the farm. They are literally operating their own supply chain – tapping their own maple trees for syrup, raising chickens for eggs, and growing their salad mixes from seed. And yet, even with these savings, it still costs more than buying products from a commercial distributer. But at the end of the day, the food looks more attractive, the meat tastes like it was raised better, and the farmers know that the work they put into every morsel is truly being appreciated and savored.

Set the Table at the Farm

Many restaurants who commit to local menus serve their fresh creations up in a natural setting. From upcycled barns to farm house restaurants in the country, the experience gets taken to greener spaces. Even if that’s not you, it’s simple to add more green no matter where your location is. A rooftop with a dedicated garden and trees can bring that feeling home. So can a patio that offers a beautiful view of the local scene. Think about materials that bring nature to the forefront.

We’re happy to offer expert suggestions for patio enclosures that enhance your environment. Custom color choices, window size and style of shades go a long way to creating a natural look. Our earth is worth protecting. Which is why, Farm-to-Table is a genuine gift to the restaurant scene that’s here to stay.

Restaurants Cheer on Holiday 2021

November 1, 2021/in Commercial Enclosed Patio/by Valerie Foley

The frosty air holds renewed optimism this holiday season. Employers are ready to acknowledge everyone’s hard work with annual end-of-year parties. So, what’s trending in celebrating? As reservations come in, it’s beginning to look a lot like a mix of in-person, virtual and outdoor holiday gatherings.

Decision One: In-Person or Virtual? holiday celebrations southern patio enclosures

A company’s existing work protocol will likely signal how that team celebrates. For those back at the office, meeting up inside a restaurant won’t feel like a big stretch. Remote workplaces will likely opt into virtual meetups. As companies decide, restaurants have ways to stay nimble to accommodate.

Now Trending: Smaller, Safer In-Person Celebrations

Cue the twinkling lights and holiday carols. Restaurant bookings are up. Private rooms are being reserved early. And establishments that invested in beefing up patios with enclosures and heaters continue to see that as a popular option.

As HR folks lean toward smaller group parties, consider buffet lines and punch bowls sidelined. This year, presenting food individually offers peace of mind. Think hors d’oeuvres with domed cloches and samplings in bento boxes. Mason jars will circulate too. And nothings say “hands-off” like that perennial favorite, the toothpick. Think about what can be prepped in a small shot glass or wine glass. Mousse? Cheesecake bites? How about mini burgers wrapped in their own tiny boxes? Or seafood on a real oyster shell? Huddle with the chef and sort out what you can do to make everyone feel safe for the jingle mingling.

Virtual Parties Theme Up

Party planners are asking themselves how to make virtual parties personal and merry. Many are turning to platforms like Welcome, which makes a virtual event feel like an interactive TV show as folks go on stage to address the crowd or network in breakout rooms. Adding experiential layers is also in vogue. We’ll see virtual dance parties with DJs getting folks moving, virtual tastings of everything from chocolate truffles to wine, decorating contests for gingerbread houses and white elephant parties with gifts shipped to attendees beforehand.

Creative Holiday Brainstorming

Some folks may be a little confused about what to do. Be ready to invent new solutions for in-person and virtual gatherings of every size. Can you open your kitchen for a cooking lesson to a smaller group? If your specialty is breakfast, can you suggest a virtual flannel pajama party with your take-out delivered to everyone’s doorsteps? Or what about a bonfire with blankets and food delivered to guests’ laps?

Another Takeaway – Carry-Out Feasts

Many restaurants are banking on take-out. Heat-and-serve menus for everything from Thanksgiving to Christmas and New Year’s Eve will be popular like they were last year. New conveniences like OpenTable’s Delivery and Takeout tab make it easy to bring home turkey with all the fixings. Use social media to remind your customers that they can host gatherings for those near and dear with your specialties of the house.

Relying on Your Support System

The partners who help your restaurant throughout the year know things are still different this year. It’s a good time to lean into friends who support you to help you pull off ways to make the most of your holiday profits. And while 2021 is winding down, it’s never too early to think about bright possibilities ahead and better health for all in 2022. In the meantime, here’s to gathering and celebrating the magic of the season.

Southern Patios Enclosures supports restaurants all over the country with custom solutions of the highest quality. Let us know how our experts can help you maximize profits with new ideas and long-lasting, affordable, commercial-grade products.

outdoor restaurant patio screens

Designing your patio enclosure? Take direction from the sun.

October 6, 2021/in Commercial Enclosed Patio/by Valerie Foley

Eating al fresco on a sunny patio on a beautiful, 75-degree day feels like heaven. While your chef can’t whip up custom weather, an enclosed patio can take the edge off as needed. Views and sun matter to guests. For restaurant owners, heating, and air conditioning costs impact profitability. And everybody, your servers and guests alike, want to be comfortable at your place. Do things right and every patio moment is golden.

Squint up before beginning. outdoor restaurant patio screens

You want to read the sun right. It sets hot in the west, which is why our patio enclosure experts pull out a compass before beginning. Taking cues from the way the sun moves throughout the day helps you choose the right materials for your screens.

Custom solutions for north, south, east, and west views.

Is your restaurant a breakfast spot that closes at 3? Do you deal with 2 or 6 months of summer? What materials are permanent in flooring and other surfaces that could impact how the sun affects your space? A custom designer considers options from every side.

A smart consideration is to use a sun shade for your restaurant’s western exposure. Then you can choose to let the sun in and expand views with more transparent materials on the other sides of your patio where the sun isn’t scorching.

You want solid, vinyl fabric that’s the strongest available – one that’s architectural grade and reinforced. Did you know that solid vinyl fabrics can be 3x as strong as fiberglass and hold onto 99% of their original strength even after 7 years in weather? Technology has come a long way to protect your investment.

Consult an expert for enlightened thinking.

Curious? Talk to a pro. If you’d like to expand your window screens to be as large as possible, our experts are happy to explain how to do it. Special construction with the heaviest bottom weight bar in the industry and a reinforced roll tube across the top now make it possible to have larger views than even a year ago. This unique offering, called MaxView, turns a patio into a shining star that produces income longer. And that’s the kind of exposure everybody really wants.

Restaurant Life After COVID

July 1, 2021/in Commercial Enclosed Patio/by Valerie Foley

“Reservations for four, please.” Once an ordinary phrase, hearing those words is now hard to take for granted. As we all make our way toward the post-COVID world, much about what the new restaurant norms will be is still taking shape. Though some changes feel like they’ll be with us indefinitely. Here are a few.

Reassurance around safety. female chef restaurant after covid binoculars

Restaurant guests want to know that you put their welfare first. Period. Your guests and staff will like hearing about the safety and cleaning steps that your restaurant takes to protect everybody. Visible signs of your concern and active measures that prove it get noticed. Seeing proper cleaning and placing inspection notices in a visible spot add up to confidence. What’s more, seating plans are likely forever changed after this time of social distancing. Fewer people are inclined to eat shoulder-to-shoulder with people they don’t know.

Digital everything.

Paperless menus are becoming more and more common. We’ve all become mildly OCD from all this. There’s less desire to touch anything that someone else has recently had in their hands. Contactless payment is now the way most of us expect to do things. What’s more, the face of many restaurants during COVID has been their website. Staying on top of your digital presence will be vital. People expect you to be up-to-date on everything from dining hours to food choices and safety policies. Open Table also advises that restaurants offer waitlists online and add outdoor tables to the floorplan to help get guests in again.

Take-out and delivery requests.

Folks will want a blend of choices for eating out or taking out. Many realize that fine-dining food isn’t always beautifully plated or the perfect temperature – and they’re ok with that some days. Though by now, chefs have fine-tuned menus that travel well and evolved successful options during the last year. Drive-through, pick-up lanes, curbside and home delivery are here to stay. With fewer people going back into an office regularly, that will likely help restaurants keep volume up.

Creativity.

Restaurants became very creative to survive. From selling their specialties in grocery stores to offering take-out cocktails, the strongest have adapted in ways no one could have predicted. It’s led to discovering new ideas to turn tables faster and other efficiencies that will continue, despite recent staffing challenges and supply chain disruption.

Community

This was here before and during COVID and will be with us for eternity. Connecting with friends and loved ones is a human need that had to be put aside during COVID. We’ve missed one another and the way we connect over food. It’s why we’ve always enjoyed gathering in restaurants and why restaurants with tables are coming back again. We’ll raise our forks to that.

An appreciation for outdoor dining.

From picnic tables in the parking lot to newly installed patios, restaurants have embraced fresh air to survive. Eating outdoors helped guests return and moved restaurant recovery forward. Now that guests have tasted the great outdoors, they want this restaurant option to be available permanently. Eating beside a heater doesn’t seem so strange. For many restaurants. temporary solutions may now be worth upgrading to become more permanent physical upgrades. Adding patios and deciding to enclose them are often smart business moves.

If you need help making a decision about enclosing your patio, feel free to reach out. We can help you sort out the kinds of protection that will work best in your climate, how to keep your guests comfortable across seasons, which solutions make the most sense for your budget and even how to finance your patio upgrade. Helping restaurants do high-quality patio improvements is what we do every day and we’re happy to share our insights. Our wish for the rest of 2021 is a return to the happiness of gathering around tables again and success for everyone who makes that possible.

Event Spaces and Restaurant Patios: Much Ado About I Do

June 2, 2021/in Commercial Enclosed Patio/by Valerie Foley

The definition of the perfect wedding venue is more open-ended than ever. Creativity is in. If you run an outdoor event space, you already know that. But if your restaurant patio is more date night, now is the time to consider hanging out a private party sign.

outdoor celebration events

Opportunity flows from the rehearsal dinner to post-wedding brunch.

And that’s just the wedding weekend. Let’s not forget the bridal shower weeks or months before that. Venue needs shift as the happy couple moves along their celebration path. Don’t discount your chance to book a special event even if you have a small patio. Warm up the fairy lights and greenery. Break out the matching tablecloths. Your patio’s vibe, whether relaxed or romantic or modern may be exactly someone’s ideal celebration spot. Maybe you want to divide your patio or event space in half with a row of shrubbery, separating the private event and still offering service to your regular guests.

Rehearsal Dinners are less fuss and more fun.

Wedding days are more pressed shirts and perfect manners. The rehearsal dinner is a chance to make silly toasts and keep things informal. Anything from your restaurant’s top-rated favorites to comfort food to steak works. Some couples share their personal story in the menu they choose – a clam bake for someone with New England roots or tapas for someone who’s Spanish. If your chef can flex, you can offer a truly one-of-a kind event.

Customize for the couple who wants things personalized.

It’s simple to get linens in a special color or put a favorite flower out. Maybe the couple wants a simple backdrop for photos or a photobooth off to the side. Adding simple touches is easy to coordinate and googlable when in doubt. Is there a place for a musician? Or a dance floor?

Make a vow to get connected.

If you find you like doing private parties for wedding events, get more of them. Introduce yourself to event and wedding planners in town. Photographers, wedding dress boutiques and wedding cake bakeries will also offer leads. Of course, word of mouth will do the trick when everyone raves about their time with you.

You’ll be richer, not poorer.

A special event can help you earn two to three times as much as a standard evening on your restaurant patio.

“With events, everything is more predictable — including food ordering, service scheduling, etc. — and higher-margin items like liquor and dessert comprise a larger portion of the check,” writes Gather CEO Nick Miller.

Keep umbrellas, optional

Nobody likes soggy gift wrap and bows. So, you’ll want to help guests focus on the celebration and not the elements. An enclosed patio makes sure that’s the case. Patio screens can stay up when the weather’s mild and balmy and come down when things head south.

Need help keeping your events weathertight? Reach out to Southern Patio Enclosures. We’re happy to help you find the perfect solution for enclosing your patio or event space.
